It actually thinks Intel quicksync is enabled if the machine is imacpro so it "claims" HEVC encoding work. That includes device properties and so on. OC is more flexible as far as options can be implemented.
OpenCore supports both UEFI and Legacy boot options. There is a recorded bug on GitHub and there is no solution for that. -no_compat_check alone requires modification to the installer (dosdude1's Catalina Patcher)? I've never used OpenCore.
